Ride height I see all the Landrum springs have a 6.5 inch true arch, what does this do to ride height compared to a stock spring...does this spring need to be de-arched to obtain a stock ride height?

The 6.5 arch will provide close to stock ride height, however most springs that you would be replacing have sagged considerably since they were new. If these provide too high of a ride height you can install lowering blocks or have the spring de-arched as you suggested. Also I would not suggest the 250 lb spring rate for a street driven vehicle. 175 or 200 lb spring rate is much closer to the stock springs on a Camaro.
